Baked Chicken Supreme with Vegetables

    INGREDIENTS:

    • 2 bone in, skin on, chicken breast supremes
    • Salt and pepper to taste
    • 1 tbsp of coconut/olive oil

    DIRECTIONS:

    1. Generously season both sides of chicken with salt and pepper
    2. Put 1 tbsp of coconut/olive oil in a medium temperature cast iron pan. Brown both sides of the chicken (skin side down first for 3 minutes a side)
    3. Meanwhile, preheat oven to 400 degrees F and bake chicken for 20 minutes
    4. Optional- Top with peppercorn sauce (recipe under recipe- meat- flank steak with peppercorn sauce) and serve with your favourite sides
