Cod with Mushroom and Red Pepper Relish

    INGREDIENTS:


    • 1 pound of cod (fresh or frozen)
    • 1/2  tsp of salt
    • 1/4 tsp of pepper
    • 2 tbsp of coconut oil 
    • 1/2 an onion, finely chopped
    • 2 tsp of fresh ginger, grated
    • 2 cloves of garlic, minced
    • 2 cups of mushrooms, sliced
    • 1 cup of  roasted red peppers, chopped

    DIRECTIONS:


    1. Preheat oven to 350 degrees. Line a baking pan with foil.
    2. Cut the fish into serving pieces and season with ¼ t. salt and 1/8 t. pepper and place in baking pan.
    3. Bake for 12-15 min.
    4. While the fish is cooking, add the oil to a large skillet over medium heat. When the oil is hot, add onion and cook for 2-3 min. Add the ginger and stir for 30 sec. Add the garlic & stir until aromatic, about 1 min. Add the mushrooms and continue to cook 1-2 min. Add the roasted red peppers and remaining salt & pepper and stir for 2 min. Remove from heat.
    5. Remove the fish from the oven and spoon the mushroom mixture over the top of the fish. 
    6. Serve and enjoy!
