INGREDIENTS:
- 1 pound of cod (fresh or frozen)
- 1/2 tsp of salt
- 1/4 tsp of pepper
- 2 tbsp of coconut oil
- 1/2 an onion, finely chopped
- 2 tsp of fresh ginger, grated
- 2 cloves of garlic, minced
- 2 cups of mushrooms, sliced
- 1 cup of roasted red peppers, chopped
DIRECTIONS:
- Preheat oven to 350 degrees. Line a baking pan with foil.
- Cut the fish into serving pieces and season with ¼ t. salt and 1/8 t. pepper and place in baking pan.
- Bake for 12-15 min.
- While the fish is cooking, add the oil to a large skillet over medium heat. When the oil is hot, add onion and cook for 2-3 min. Add the ginger and stir for 30 sec. Add the garlic & stir until aromatic, about 1 min. Add the mushrooms and continue to cook 1-2 min. Add the roasted red peppers and remaining salt & pepper and stir for 2 min. Remove from heat.
- Remove the fish from the oven and spoon the mushroom mixture over the top of the fish.
- Serve and enjoy!
