INGREDIENTS FOR SALAD:
1 small shallot, chopped
2 cups of baby arugula
1 cup of kale
1 granny smith apple, thinly sliced
1 small fennel bulb, thinly sliced
1/2 cup of chopped walnuts
INGREDIENTS FOR SALAD DRESSING:
2 tbsp of lemon juice
2 tsp of honey
1 tsp of dijon mustard
2 tbsp of olive extra virgin olive oil
Salt and pepper to taste
DIRECTIONS:
Combine all salad ingredients in a large mixing bowl and toss
Combine all salad dressing ingredients in a small bowl and stir
Add fish of choice (optional) and serve
