    INGREDIENTS FOR SALAD:


    • 1 small shallot, chopped
    • 2 cups of baby arugula
    • 1 cup of kale
    • 1 granny smith apple, thinly sliced
    • 1 small fennel bulb, thinly sliced
    • 1/2 cup of chopped walnuts 

    INGREDIENTS FOR SALAD DRESSING:


    • 2 tbsp of lemon juice
    • 2 tsp of honey
    • 1 tsp of dijon mustard
    • 2 tbsp of olive extra virgin olive oil
    • Salt and pepper to taste

    DIRECTIONS:


    1. Combine all salad ingredients in a large mixing bowl and toss
    2. Combine all salad dressing ingredients in a small bowl and stir
    3. Add fish of choice (optional) and serve
