Basil Chicken and Wild Rice and Vegetables

    INGREDIENTS:

    • 2 boneless, skinless, chicken breast (1 cm cubes)
    • 1 bunch of basil, chopped
    • 2 tbsp of fish sauce
    • 2 cloves of garlic, minced
    • 1 tbsp of coconut oil

    DIRECTIONS:

    1. Put 1 tbsp of coconut oil in a pan under medium heat
    2. Add 2 cloves of garlic and sautee for 2 minutes 
    3. Add chicken cubes and cook for 8 minutes (until chicken is cooked)
    4. Add chopped basil and stir until basil is wilted
    5. Add fish sauce, stir for 1 minute, then turn the heat down
    6. Serve with choice of grain and your favourite vegetables
