Seared Garlic Scallops and Pureed Peas
INGREDIENTS:
- 1 pound of scallops
- 2 tsp of butter
- 2 tsp of olive oil
- 5 cloves of garlic
- 1/4 of a medium onion
- 1 and 1/2 cups of frozen peas
- 1/2 cup of chicken broth
- salt and pepper to taste
SCALLOP DIRECTIONS:
- Heat 1 tsp of butter and 1 tsp of olive oil in a pan over medium heat
- Add 2 cloves of minced garlic and wait about 3 mins
- Generously season scallops on both sides and gently place then in the pan (3 minutes a side for large scallops, 2 minutes a side for smaller scallops)
PUREED PEAS DIRECTIONS:
- Heat 1 tsp of butter and 1 tsp of olive oil in a pot
- Add 3 cloves of chopped garlic and a quarter of an onion.
- Stir for a couple of minutes then add 1 and a half cups of frozen peas.
- Stir for another 2 minutes then add half a cup of soup broth and salt to taste.
- Blend it to a purée and serve.
