Seared Garlic Scallops and Pureed Peas

INGREDIENTS:
  • 1 pound of scallops
  • 2 tsp of butter
  • 2 tsp of olive oil
  • 5 cloves of garlic
  • 1/4 of a medium onion
  • 1 and 1/2 cups of frozen peas
  • 1/2 cup of chicken broth
  • salt and pepper to taste
 SCALLOP DIRECTIONS:
  1. Heat 1 tsp of butter and 1 tsp of olive oil in a pan over medium heat
  2. Add 2 cloves of minced garlic and wait about 3 mins
  3. Generously season scallops on both sides and gently place then in the pan (3 minutes a side for large scallops, 2 minutes a side for smaller scallops)
PUREED PEAS DIRECTIONS:
  1. Heat 1 tsp of butter and 1 tsp of olive oil in a pot
  2. Add 3 cloves of chopped garlic and a quarter of an onion. 
  3. Stir for a couple of minutes then add 1 and a half cups of frozen peas. 
  4. Stir for another 2 minutes then add half a cup of soup broth and salt to taste. 
  5. Blend it to a purée and serve.
