Shrimp Scampi

INGREDIENTS:
  • 1 pound of peeled and deveined shrimp
  • 4 tbsp of butter
  • 4 tbsp of olive oil
  • 2 shallots
  • 2 gloves of garlic
  • 1 tsp of chilli flakes
  • 1/2 a cup of dry white wine
  • 1 lemon
  • 1/4 a cup of parsley
  • Salt and pepper to taste
DIRECTIONS:

1. Melt 2 tbsps of butter with 2 tbsps of olive oil in a medium heat pan
2. Finely dice 2 shallots and 2 cloves garlic and saute with red pepper flakes (if using) until the shallots are translucent. Should take about 3 -4 minutes.
3. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. 
4. Remove the shrimp from the pan; set aside and keep warm. 
5. Add wine and lemon juice and bring to a boil. Add 2 tbsps of butter and 2 tbsps of olive oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked gluten free pasta. 
6. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.
